An earlier study shows that our body process of inflammation will be affected by our diet. A study by the Swedish researchers shows a reduction and suppression of long-term heart inflammation in patients with coronary artery disease such as angina and myocardial infarction with anti-inflammatory properties of nutrient lutein.

A lower inflammation in the heart with the consumption of lutein carotenoid (a natural color pigments) vegetables.

When the immune cells are treated with lutein in patients with coronary artery disease, the researchers have found a lower inflammation in those cells when compared with other immune cells.

Lutein is a plant pigment. The nutrient lutein was found in colored vegetables such as kale, yellow peppers, red peppers and dark-green leaves (spinach, carrots, and broccoli). It is one of about 600 known naturally occurring carotenoids produced by the plants.

The researchers have conducted a study among 193 patients with heart disease. The study has found that the cells of our immunity system can absorb and store excess nutrients. They also found evidence which shows that a higher level of lutein was associated with lower levels of interleukin-6 (or IL-6), which is an inflammatory marker. Now, the researchers are planning to conduct a study to find out the positive effects on the immune system in patients with coronary heart disease with higher consumption of lutein-rich foods.
